Banana Bagatelle


This cake special make for my colleague birthday.I want to make this cake long time already.I think all people will love it.Because it full of flavor.Chocolate,coffee and banana.Chocolate and coffee always my favorite...hehehe.....So,you know why i choose this cake.


The banana slices become dark after take out from the fridge.I already put lemon juice on the banana before i deco the cake.


Poor cutting techniques.I think i have make more to improve myself..hahaha....


Here is the recipe :

Ingredients

Sponge Cake
250g sponge cake mix
2tbsp cocoa powder or chocolate powder
80ml water
3 eggs (Gred-A)
80g melted butter or corn oil

Method

  1. Place all sponge cake mix ingredients except melted butter or corn oil in a mixing bowl.Beat at high speed for 8-10 minutes or until the batter fluffy.
  2. Turn off machine,fold in melted butter or corn oil.Then pour the batter into lined cake pan.(I using 7' cake pan)
  3. Bake in preheated oven at 180'c for 15 minutes or until skewer inserted into the centre of the cake comes out clean.
  4. Let the cake cool down.Once cool,cut into 3 equal layers.
Ganache
200g dark cooking chocolate
100g dairy whipping cream

Method
  1. Double boil dark cooking chocolate and cream until melted.
  2. Set ganache aside covered with cling film.
Swiss Meringue Buttercream

60g eggs white (from 2 large eggs)
100g white sugar
170g unsalted butter-room temperature (cut into small pieces )

Decoration
1 comb banana
some lemon juice

Method
  1. Peel and halve horizontally.
  2. Slice 2 banana and put some lemon juice on it.
Assemble cake
  1. Place a layer of sponge cake on a cake platter.
  2. Spread some buttercream over the cake and layer with banana,drizzle some ganache over the banana.
  3. Cover with some buttercream  before putting another layer of cake.
  4. Repeat with another layer of buttercream,banana and ganache then lastly with cake.
  5. Cover the whole cake with buttercream.Put in the fridge for 10 minutes.
  6. Then put the ganache over the cake and put back in the fridge for another 10 minutes.
  7. Decorate the top with some rosettes of cream and sliced banana.
  8. Refrigerate the cake at least 1 hour before cutting and serve.(i put in fridge overnight)

Roast Pork Belly-烧肉

This also my sister request.She request many time but i lazy to make.She say,she very miss the salty taste of the homemade roast pork belly.We long long time didn't make this roast pork belly.My mother say she not very remember the recipe.So i search for the recipe.I choose Christine's Recipe.It not much seasoning.

It look very nice but the skin not enough crispy.Taste enough salty and the meat is so tender.It melt in my mouth.Do not have to chew very long.They'll love it.Especially my boyfriend.He say like bought at store.


Here is the recipe :

Ingrendient

2.5kg pork belly
1tbsp chinese cooking wine (Shaoxing wine)
 salt to taste

Seasonings

8tsp salt ( If you want more salty,you can add more salt)
4tsp sugar
2tbsp five-spice powder

Method
  1. Combine salt with sugar and five-spice powder and set aside. 
  2. Rinse the pork belly. Blanch in boiling water for about 15 minutes and the skin is softened. Drain well and wipe dry. Use a fork to poke the rind as many holes as possible. Turn over the meat side, cut a few slits on it.It help absorb seasonings better.
  3. Rub the cooking wine over the pork.Rest for awhile.
  4. Cover the meat with seasoning.Make sure there no seasoning on the skin.If not the five-spice will darken the skin.
  5. Wrap the meat with foil.Don't cover the skin.Let the skin dry up in fridge.Marinate overnight.
  6. Remove from fridge and let it rest at room temperature for a while.Poke the skin with fork once again.Wipe dry.Season the skin with salt.
  7. Bake the pork belly in preheated oven at 220'c for 1 hour 45 minutes.
  8. Remove and let it cool down before chopping.

Purple Sweet Potato Pie

This recipe is from a book name '100 Desserts'.When i reading this book,this is the 1st recipe i want to try.I love the colour.It healthy too.Purple sweet potato is very sweet and very fragrant.

My family love this pie very much.I also love it.Will make again,because i bought purple and yellow sweet potato.I think two colour will look more nice.My colleagues not yet try this pie.
Here is the recipe :

Ingrentiens

Pie crust :
180g flour
90g cold unsalted butter
40g icing sugar
1/2 egg,at room temperature
vanilla extract

Method
  1. Finely dice the butter.
  2. Mix the flour and icing sugar together.Add diced butter to the dry ingredients.Knead with your fingertips until it resembles breadcrumbs.
  3. Pour in egg and mix well until become a dough.
  4. Leave it rest in fridge for 30 minutes.
  5. Roll the dough thin.Press the dough into the pie pan.
  6. Prick holes with fork.Line the crust with baking paper and put baking bean or rice inside on the crust.
  7. Bake in preheated oven at 180'c for 10 minutes.Leave it to cool.

Filling :
400g purple sweet potato,peeled
30g butter
3tbsps condensed milk
1tbsp sugar

Method
  1. Slice sweet potato thinly and steam until soft.Mash it while still hot.
  2. Add the remaining filling ingredients and stir well.
  3. Put in the filling on the pie crust.
  4. Bake in preheated oven 180'c for 15 minutes.
  5. Sprinkle some icing sugar on top as garnish.
  6. Slice and serve.

Birthday month and 1st order

This post i won't write any recipe.Just want to share some birthday cake i make for my love one.March and April is a busy month for me.Whole month of March i only do baking.Almost everyday back for work i do baking.Sometime baking until mid-night only take my dinner and take bath.Very tired but very happy.When i see they'll eating my cake and say.....emmm...yummy..i love it...well done...I already forget my tired....Everything pay back...
March is my lovely boyfriend and my only sister birthday.April,no need say..is My Birthday....and no forget my lovely colleague birthday too.

Strawberry Vanilla Cake is for my boyfriend Birthday.He like sponge cake.I bake a vanilla sponge and filling with strawberry and wripping cream.Deco with some strawberries and marshmallows.He love it very much.He eat half of the cake.Present,i bought him a SPA.

2nd birthday cake is for my only sister.She request for Non-Bake Blueberry Cheesecake.Her favorite.No matter what celebration she only want this cake...Here is her cake...
The cake base i make from Oreo.It abit sweet for me but my sister love it.Normally i make this cake,the blueberry filling i put on top but this time i make it look like marble.Nice,right?But too bad that my mother can not eat this cake because she is a vegetarian.I planing to make one without using gelatin.I found the replacement.I think i will make again on Mother's Day.
For my colleague and my birthday,i still thinking.My birthday also have to bake cake for myself...Don't know when got people bake cake for my birthday...hahaha....Wait next week la...you will know it......

Beside baking birthday cake,my friend also request me to make 2 set of fondant cupcake.One is for her colleague fullmoon and another one is for her friend birthday.This is 1st time i take order from other.I never sell my cake before.I only bake for my family and friend as a gift.


She request for 2D fondant for this cupcake.It is look cute and sweet.My friend Janice Thon helping and teach me how to mould this 2D fondant.Theme is white and pink.Thank you to her very much.
1 week later she ask me to do another set of fondant cupcake.This time is for a guy birthday.She want 1 3D fondant and other 5 is 2D.Theme is frog.The frog inside the cantoon Princess and Frog.This is the frog....

 Who kiss me,i will give my heart to her....come kiss me...LOL :P


Hope they'll like this cupcake.

This is all i done for March and early of April...Sorry to all my friend who date me but i reject because i really busy at that time.Before i end my post i will like to share my early birthday present...i love it very much..Thank you my friend.

Mango Mille Crepe

This is my 2nd time make Mille Crepe.The 1st Mille Crepe i think about 1 year ago.My colleagues request me to make it again.She like it very much.Mille Crepe now is very popular in Malacca.My friend told me that it expensive too.The ingredients is not very expensive and not much ingredient needed.Just need long time to fry the crepe.This time i decorate it look like a big Chrysanthemum flower.

Here is the recipe :

Ingredients

For Crepe
6 eggs
1000ml fresh milk
300g plain flour ( i using superfine flour )
90g melted butter

Method
  1. Lightly beat the eggs,add in milk and melted butter then sift in flour.Mix well.
  2. Strain and cover with plastic wrap.Then put in fridge overnight,this allows the gluten in the flour a chance to relax.
  3. Place a non-stick pan on low heat.
  4. Add a ladle of crepe batter and quickly tilt the pan to coat the entire surface evenly in a thin layer and pour the excess of batter.
  5. Cook one side only until cooked or golden brown.Remove.
  6. Continue cooking the rest of the crepes.

For mango cream
300ml non-dairy wripping cream
300g fresh mango puree
5tbsp mango concentrated
1tbsp lemon juice


Method
  1. In a large mixing bowl, beat whipping cream on high speed until thick and stiff.
  2. Add in the rest of ingredients, combine well and chill in the refrigerator.
To assemble Mille Crepe
  1. Using a pastry scraper, spread a thin layer of mango cream on the first crepe.
  2. Repeat until finish all the crepe and cream.
  3. Chill for overnight.
  4. Decorate with mango slices. 
  5. Serve cold.

    Homemade Vanilla Extract

    Last time i thought vanilla essence and vanilla extract is a same thing.After Wendyinkk post her homemade vanilla extract,i only know that they are different.She say vanilla essence is not a real thing.It fake.Very scary.
    I tell my colleagues about it.So we make a decision to make our own vanilla extract.Not hard to make.The better vanilla pod,the better taste of the vanilla extract.We not using the expensive vanilla pod.It only cost RM 5.00 per-pod.We using 4 vanilla pods.Vodka only cost RM 11.00.All together only RM31.00.Cheap,right?Only RM 31.00 you can get a real thing.

    All you need is :

    1 bottle of 250ml Vodka ( must have 40 % vol )
    3-4 quality vanilla pod

    Split the vanilla pod lengthwise and put in the vodka.
    Place the bottle in a dark and cool place ( Not in the fridge ) until it turn dark and like strong tea colour.
    It take about 3 months.
    Shake it time to time.

    Easy,right?You can but the cheap vodka at Tesco or Chinese medicine shop.Make sure the vodka is pure,not with fruit flavor.
